The best response (or plan) is to prepare in advance and explore the risks associated with your data, rather than wait until the company is hacked and then figure out what to do next.
Backup your data regularly, it will significantly reduce the damage caused by data hostage or ransomware attacks. And make sure the data and the backups are in 2 different places, so that an attacker cannot access both at the same time.
